The meal I struggle the most with is lunch. I work in an office, but I probably have it better than lots of other office workers. My office has two huge fridges and a full kitchen. Honestly the kitchen is way nicer than mine! So why am I struggling to eat a real food, tasty lunch? I’ll break it down for you and then let you know how I am over coming it.
- I don’t really like re-heated food
- But I want to eat something warm
- I only have 30 min to prepare and eat
- I’m super lazy!
Let’s start at the top. I don’t like food I re-heat. Although I am a good cook, so I am told 😉 , I am always weary of my own cooking. I think a lot of people are like that! But my dinner again the next day? Nine times out of ten, I am heading out to lunch and that leftover is sitting in the work fridge, ummm for a while. Whoops!
Since its cooler up in Seattle most of the year I would like to eat something warm. But when I have brought chicken to re-heat I run into bullet point one. Cooking something from scratch will either take way too much time at lunch or a lot of prep at home, so I was kind of stuck. Until a memory popped to the front of my mind. A friend of mine, used to make hotdogs in a toaster oven. I never had a toaster over growing up so I guess we had a conversation about it back in high school.
So I picked up a pack of grass-fed hotdogs from my Co-op. They are from Applegate. Then I needed a side. I like veggies but I have not found myself eating too many lately. Also at my co-op I found a jar of traditionally fermented carrots. They are from Firefly Kitchens. I am about half way through my first jar and I really like it! Plus I have been wanting to add more ferments into my diet.
So here is what I am doing and really liking it!
I take 2 of the dogs and cut them down the middle and split them open. They warm up faster this way. I set them on the tray of the toaster over and broil them for a few min. Then I top with a couple thin slices of cheese. I eat it with a big scoop of my carrots! I finally have a meal that is easy, warm and isn’t leftovers! It is possible!!
