It seems there are two fall food camps in the world. Team Apple and Team Pumpkin. I say the hell with teams, let’s all be friends and that friendship is this dish.
Busy night? Soccer practice running until dark? Lots of hungry mouths to feed? This dish is ready in UNDER 30 minutes! Yes it is possible!! On top of that, it’s all cooked in one pan, making clean up super fast as well!
I am using raw pumpkin that I cut up myself. I promise it’s not too hard. But if you are super short on time, you can substitute pre-cubed butternut squash or pumpkin which you can find at many stores these days.
The spice blend below is my take on pumpkin spice, but I added a little smoke and heat to it! I think you are going to love it! This dish serves 2 hungry adults, feel free to double this dish. Past doubling I would spit onto two roasting pans!
