Before I went keto I used to make healthy gummy “bears” all the time. I sweetened them with raw honey. After I went keto I just removed the honey. YUCKKK lesson learned, no more gummies! But now I have finally found the perfect way to make healthy KETO gummy bears that taste great and help me keep my electrolytes up! Its a triple win! The best part, they are only 3 ingredients!

I recently recieved a sample of an electrolyte mix in my keto krate. It’s one of the reasons I love that subscription box so much, I get exposed to new low carb snacks I would probably never stumble along myself.
The mix is called Ultima Replenisher and it has 6 electrolytes, nothing artificial (even the color is all natural) and it’s totally cured me of any low carb flu! This post is NOT sponsored by Ultima but I just love it so much I need to share it with my keto fam 🙂
Ultima is what gives these keto gummy bears their awesome flavor and fun colors too. I have used the cherry pomegranate flavor for one batch and I did a mix of the lemonade and raspberry for the second batch I made. They also have grape and orange, and you can have fun mixing the flavors in your next batch of gummies.
Beat the Low Carb Flu
I love healthy keto gummy bears because I get a little extra dose of the crucial electrolytes that we tend to lose on the keto diet. The keto diet reduces the amount of water your cells retain, and to flush out that water you lose electrolytes like salt, potassium and magnesium.
The feeling you get when your low on these is called the low carb flu. There are lots of ways to increase your intake of these minerals. You see me put salt in my water every time I fill up my water bottle. But a scoop of Ultima keeps me going strong with no low carb flu symptoms, in fact I feel extra energized.
I will not eat anything that tastes bad (duh), and my electrolytes are no exception. It’s the taste that gave me the healthy keto gummy bear idea. After a month of drinking Ultima daily I saw my gummy mold in my drawer in the kitchen. DING the light bulb went off and I realized I could finally have healthy keto gummy bears!
Healthy Keto Gummy Bears Recipe TIPS:
I started with a little coconut milk it make the gummies slightly creamy and add a touch of fat. If you don’t like coconut flavor, just use water!
You start with the cold water or coconut milk and the Ultima and mix it together well. I use a Pyrex pitcher for mixing, since it makes pouring into a mold a heck of a lot easier. Once your boiling water is ready, you can add the gelatin to the cold mix. When you mix it, it will be really thick and grainy.
Then you add your boiling water and mix mix mix. The grainy-ness will go away and you’ll be ready to pour!
Healthy Keto Gummy Bear Recipe
Just 3 ingredients make a delicious and healthy gummy bear you can have anytime on your keto diet. They are full of electrolytes and give you lasting energy!
Ingredients
- 2 TBS gelatin- I use this brand and have for years. Just make sure you get one that will gel! The one I use--> click here
- 1/4 cup coconut milk OR cold water
- 3/4 cup boiling water
- 2 scoops of your favorite flavor on Ultima- I get it on Amazon HERE
Instructions
- In a small pitcher or bowl with a spout- mix the 1/4 cup cold water or coconut milk with the Ultima
- Add the gelatin to the cold liquid- mix well and it will start to firm up and look grainy.
- Add the boiling water and mix for at least 1 minute- until everything is dissolved. Like when you made jello as a kid
- Pour the mix into a mold and take the mold into the fridge. I set my mold on a small cutting board for transport, since it's floppy.
- Once firm- 1 hour to so- remove from the mold and store in an airtight container. If you leave them exposed to the air for too long they get kind of hard and chewy!
Notes
Once gummies are solid, transfer to a airtight container to prevent them from getting too hard and chewy.

October 17, 2018 at 1:03 pmhi, i made these today like 4 hours ago, and they are stuck in a ‘jello’ consistency in the fridge. i used the exact measurements and ordered all of the ingredients you use from amazon, even the gelatin. i love the flavor, but was really looking for the gummy quality. do you think i should try again and add more gelatin?
Heather says
October 18, 2018 at 10:01 amYes I would add more more gelatin. But start slow because it can get clumpy. You may also be able to melt down the ones you made and add a bit more, so you don’t waste any ingredients.
